Hannah Grants Flanders Fish n Chips

Ingredients

  • 600g of filleted cod/monk fish/white fish of your choice
  • 400g brussels sprouts
  • 100g blueberries
  • 1kg new potatoes
  • 25g ginger
  • 1 tbsp honey
  • 4 tbsp apple cider vinegar
  • Olive oil
  • Salt and pepper

Notes

  • Instead of using sprouts I added spinach at the end with a little water to wilt the leaves over the potatoes.
